WHAT IS BANQUET SETUP?

A “banquet” is a formal meal with toasts and short speeches. However, in the hotel industry, it refers to all types of function catering.

The banquet manager runs the banquet department, which is part of the food and beverage department. The banquet manager is in charge of organizing catering for events.

BANQUET SETUP TYPES

The following are the various types of banquet tables used in hotels:

1. BANQUET ROUND TABLE SETUP

Only round tables in various sizes are used in the banquet round table setup plan. Unlike a standing buffet, this style works best for meals where guests have to sit down and eat. To accommodate guests, hotels use round tables of varying sizes.

The smaller the round table used, the more space is required, as each additional table necessitates more space for gangways. To avoid losing many areas in the gangway, larger round tables are preferable.

These are the most common round table dimensions and seating capacities:

• 60′′ dia accommodates 6 to 8 guests

• 66′′ dia accommodates 8 to 10 guests

• 72′′ dia accommodates 10 to 12 guests

This plan is also good for discussions, brainstorming sessions, team-building sessions, and any other sessions in which members need to work closely together.

To make the best use of available space, we must determine the number of round tables that can fit in a given space.

Assume a potential client wants to host a dinner for 500 people at round tables. We have to figure out if the client’s request can be met by figuring out how much space 500 people need.

2. CRESCENT ROUND TABLE SETUP

In this type of table setup plan, the guests sit on one side of the round table so they can watch the food being made. The guests will occupy half of the table situation, which means that this type of plan will require twice the space of a round table arrangement

The industry standard is 26 square feet per person. The minimum area needed to accommodate 500 people is 13,000 square feet.

3. ROUND TABLE CLASSROOM SETUP

The seating arrangement in this style is similar to that of a classroom, with tables for writing and chairs. This type of plan is recommended for workshops, seminars, lectures, and other events where participants are expected to take notes or study handouts.

A table 6′ or 8′ long and 18″ or 30″ wide is typically used. The chairs used may have an armrest or not. The benchmark calculation for this style of arrangement is 14 to 16 sq. ft. per person if 18′′ wide tables are used and 16 to 18 sq. ft. if 30′′ wide tables are used.

4. CONFERENCE / BOARDROOM STYLE SET UP

It is the plan with a rectangular table and chairs around it. It’s a good way to set up a banquet table for small groups who want to talk or give a presentation.

In this plan, the guests sit around a rectangular table to watch and talk about the presentation. When top management is involved, the ideal plan is for the board of directors to meet, the managers to meet, and so on.

It has some flaws. If the group is larger, this style of table plan may keep the participants too far apart for effective interaction or communication. To see the screen or listen to the speaker, those in the front would have to turn their chairs. The area allowance per person is 21 to 23 square feet.

5. AUDITORIUM / THEATRE STYLE SETUP

In this type of banquet setup, only chairs are used. Chairs are arranged in rows, as in a theatre, with adequate legroom between rows. This plan can accommodate the vast majority of people. Its allowance per person is 8 to 9 square feet.

6. OPEN-ENDED / U-SHAPED TABLE SETUP

This banquet table setting plan is created by joining the tables to form a ‘U’ shape and placing the chairs along the table’s outer edge. It is appropriate for intense meetings that require interaction. The presentation source is located at the open end of the U-shape. The presentation source is located at the open end of the U-shape.

In a large U-shaped plan, the participants may be too far apart for effective interaction. The area allowance for the ‘U’ shaped plan per person is 30 to 32 sq. ft.

7. HERRINGBONE / FISHBONE BANQUET SETUP

This banquet-style setup is similar to a classroom-style setup, but the tables and chairs are arranged at a slight angle. The chairs can be placed on one or both sides of the tables.

This table arrangement is ideal for making better use of space in small rooms. The area allowance per person in this type of plan is difficult to calculate because the angles of the setups vary. The area allowance, however, is less than that of straight setups.

8. STAR OR STARFISH STYLE SETUP

In this way of setting up a banquet, the presenter can’t be seen because the tables are odd shapes like triangles, hexagons, ovals, etc.

This style is appropriate for diplomatic, counseling, or sensitive discussions and brainstorming sessions, games, and so on, where no one is treated as the leader. Because of the unusual shape of this setup, calculating area allowance is difficult.

9. HOLLOW SQUARE CONFERENCE SETUP

This style is similar to the conference-style setup, but with a hollow interior. The table is set up the same way for board meetings. The constraints are similar to those of a conference setting. The area allowance per person is 21 to 23 square feet.
